Fruit and Vegetables! Not only are they delicious; they are absolutely essential for optimum health. For a long time I thought fruit and vedge are fruit and vedge, but now I’m starting to appreciate the benefits of eating organic. Not only do they taste that little bit better but they are so much cleaner for our bodies; and with all those nasty toxins around us every single day; in the air, what we put on our skin, in our hair, on our clothes (I could go on and on) why not take something away? It’s well worth it, especially if you’re looking to start a family (Men and Women); every little bit counts right. It basically shows those 12 fruit and vegetables you absolutely should try to only eat organic due to findings that the conventional types have tested positive for residue of at least 1 pesticide (strawberries are one of the biggest culprits) and those 15 fruit and vegetables that you can probably afford (from a health perspective) to go conventional if you’re on a budget.
Now introducing my new ”go to” side dish ”NHW’s Vegeetable Medley”. We literally had this for dinner alongside our main meal every night last week. Oh and if my last post about ‘Kidney Yang Deficiency’ was interesting for you, then this is another great meal to warm and nourish your yang and help bring your Kidney back into balance. Also a great dish for Melancholic and Vata body types if you follow the Traditional European or Ayurvedic Medicine schools of thought respectively.
NHW’s Vegetable Medley
Ingredients
o Pumpkin or sweet potato
o Broccoli
o Zucchini / courgette
o Yellow squash
o Mushrooms
- You can play around with this – use your favourite vegetables or those that you have left at the end of the week.
o 2 tbsp olive oil or 1 tbsp coconut oil
o 1 tsp garlic
o Salt and pepper to taste
Method
o Pre-heat oven at 200 degrees Celsius
o Roughly cut vegetables into bit size pieces
- make sure the pumpkin/sweet potato is quite small) and place them in a shallow oven dish covered in baking paper
o Mix in the garlic, olive oil, salt and pepper ensuring all vegetables are coated
o Bake for 6 minutes, remove from the oven and mix around again
o Bake for another 6 or until tender and crispy if that’s how you like your roasted vegetables and enjoy.
If you add in a few extra ingredients (as many as you like) you can easily make this a healthy full hearty vegetarian meal.
· Quinoa
· Beans
- kidney and/or butter beans are my favourite but you can use whatever you like.
· Kale
The kale and beans taste even better if cooked in the fry pan for a couple of minutes with a pinch of olive oil or coconut oil then mixed into the vegetables
Handy hint – I cut up all my vegies on a Sunday then take what I need out during the week, mix it with the olive oil, garlic, salt and pepper then Voila dinner is ready in less than 20 minutes .
